Cognac is a type of brandy that is made from the white grape wine of the vines that are grown around the city of Cognac, a warm area in the French area of Charente. The limestone in the soil contributes to the quality of the cognac, owing its delicate flavor and aroma to the methods of distillation (at least twice in a copper pot still) and maturation of at least two years in oak barrels.
Its production methods must meet certain requirements established by the Bureau National Interprofessional du Cognac. Cognac is one of the three regions with a designation of origin (AOC) within the European Union to produce brandy.
